Traditional Recipe: Daraba
Daraba is a Chadian vegetable stew made with okra, sweet potatoes, eggplant, and peanut butter. It's flavorful, filling, and represents local cooking traditions.
Ingredients:
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tomatoes, chopped
- 1 sweet potato, diced
- 1 cup okra, sliced
- 1 cup spinach or leafy greens
- 1 cup eggplant, diced
- 1/2 cup peanut butter
- 4 cups vegetable broth or water
- Salt and pepper to taste
Instructions:
- Sauté onions and garlic in oil until soft.
- Add tomatoes and cook until they break down.
- Mix in vegetables and cook for 5 minutes.
- Stir peanut butter with broth and add to the pot.
- Simmer for 20 minutes, then add greens and seasonings.
